i have a love affair with spring (salad) rolls and this salad fills every single craving. it’s delicious + nutritious.
ingredients//
2 cups romaine lettuce, chopped
2 large carrots, chopped
1 cup cucumber, chopped
3/4 cup bell pepper, chopped
1 cup purple cabbage, chopped
1/2 avocado, cut into cubes
1 green mango, cut into cubes
1/4 cup fresh basil, chopped
2 tbs fresh mint, chopped
1+ cup vermicelli rice noodles
1 cup chopped tofu or shrimp
1/2 lime for serving
homemade peanut sauce:
1 large spoonful peanut butter
splash of warm water
1 tbs soy sauce
1 tbs rice vinegar
1/4 tsp garlic powder
dash of maple syrup
method//
combine dressing ingredients. have fun with it - taste as you go! mix all salad ingredients together and pour dressing on top. enjoy!
