rhubarb paloma // mocktail

sweet, spicy, tangy — this is literally the mocktail that dreams are made of.

ingredients //

hot honey

tajín

1oz rhubarb simple syrup

2 limes, juiced

3oz fresh grapefruit juice (1/2 of a grapefruit, juiced)

crushed ice

sparkling water


method //

start by making your rhubarb simple syrup - you can use any simple syrup you have, but this adds a nice twist and it’s SO EASY. cut rhubarb into pieces and add to a saucepan - cover with water and boil down until the water is pink-ish. about 15 min?

strain rhubarb liquid into another saucepan and add 1/2 cup of cane sugar. bring sugar + rhubarb juice to a boil and then simmer until it thickens. add to a mason jar and rest in fridge for up to a week! (i used immediately after making - wasn’t as thick but did the trick)

swirl the rim of your glass in hot honey, then tajín and add to the freezer. then, mix simple syrup, lime juice, grapefruit juice and ice to a mixer. shake.

remove glass from the freezer and add a big ice cube. pour mixed drink into glass & top off with sparkling water and a slice of grapefruit skin.
