a personal lava cake for 1 or 2 people made in about 15 minutes with 7 ingredients. no dessert celebrates love quite like this one… if you’re a fan of orange & chocolate, make sure you add some zest, it’s magical. enjoy!
ingredients//
3 tbs coconut sugar
1/2 tsp vanilla extract
1 egg, 1 egg yolk
pinch of salt
2 tbs 1-1 (gluten free) flour
3oz dark chocolate (1/3 bar), chopped
2ish spoonfuls coconut oil
optional — zest of 1 orange, powdered sugar
method//
preheat oven to 400. add sugar, eggs, salt, and vanilla to a bowl. whisk vigorously for 2ish min until light and frothy.
melt your chocolate. i put mine in the micro with a big spoonful of coconut oil for two 30 second intervals. add chocolate to egg mixture and whisk.
add orange zest and mix.
slowly add in flour until smooth.
coat ramekin (or a mug or mini pie dish) with coconut oil and some coconut sugar. add batter to dish. you can add some more zest on top if you want, too.
bake for ~12 minutes. the outside should be firm and the inside should look gooey. don’t overbake!!
cool for a few minutes and then set upside down on a plate and lift up! add an orange slice and powdered sugar on top
*i tweaked a New York Times Cooking recipe to make it DF/GF. you can use regular cane sugar, regular flour, and butter instead of coconut oil. i’ve tried them both and they taste the same!
