with an activated charcoal black cold foam on topppp. i meant it when i said that i didn’t realize how necessary it was for me to have horchata in my fridge at ALL TIMES. it’s sooooo good and this recipe is the spookiest take on a classic.
ingredients//
horchata:
1/2c rice
1/4c black sesame seeds
3c water
1 large cinnamon stick
1.5 cardamom pods

1.5 cup milk
1 tbsp vanilla extract
1/4 tsp salt
1/4c maple syrup
cold foam:
1/2c heavy cream
1 tsp activated charcoal (optional)
1-2tsp maple syrup
method//
the day before you plan to serve, add rice, cinnamon stick, cardamom and water into a pitcher. cover and let soak overnight in the fridge. the next day, add everything (even your water) to a blender for 1min. then, strain 3-4 times until all of the rice, etc. has been removed. add your strained horchata back to your blender with non dairy milk, maple syrup, vanilla and salt. blend until smooth. add back to your serving pitcher and pour over ice! to make the cold foam, whisk heavy cream, activated charcoal (optional) and a bit of maple syrup until thick. pour on top. garnish with black sesame seeds and a toasted cinnamon stick! enjoy.
