ingredients//
1 package pasta
1 avocado
1/4 cup pine nuts
1/4 cup pistachios
2 cloves of garlic
1/4 cup olive oil
1 lemon, juiced
large handful of spinach
parmesan cheese (measure w ur heart)
2 cups pasta water
salt and pepper to taste
parsley + more pine nuts, to garnish
method//
cook your pasta according to package instructions. make your sauce by adding avocado, nuts, garlic, olive oil, lemon juice, spinach and parm to a blender. slowly add in pasta water until you reach desired consistency. after draining your pasta, add sauce into the pasta and add more pasta water as needed. garnish with pine nuts, parsley and parmesan. Enjoy!
